PANCAKES:
At Home:
Bag either ½ cup dried cranberries, dried blueberries, chopped pecans or dried cherries. Bag 1 1/3 cup complete pancake mix and label: “Add 2/3 cup water and 1 ounce oil.” Bag ½ cup by volume, or 70 grams by weight pure maple syrup powder, 1 cup dextrose, 1 tablespoon brown sugar, 1 tablespoon arrowroot. Label this bag: “Add 3 ounces of boiling water”. If you can’t find dextrose, use either all pure maple sugar powder, or a combination of white or brown sugar with the pure maple sugar powder.
Put 2 ounces of canola oil in a small plastic bottle.
On the Trail: Add 3 ounces of boiling water to the pure maple syrup powder, sir well and set aside. Add 2/3 cup water, dried fruit or nuts, and 1 ounce of oil to the complete pancake mix and set aside 5 to 10 minutes. Heat up your skillet with a dab of oil and cook the pancakes at the lowest setting of the stove. A thin walled fry pan, like a titanium fry pan will not hold enough heat to keep the batter from sticking, so make sure you use a thicker fry pan.
